About Global
GLOBAL knives were first designed in 1985 by industrial designer Komin Yamada, who was commissioned to create a range of Japanese kitchen knives that broke from Western cutlery convention. They're manufactured by hand at the Yoshikin factory in Niigata, Japan, and are built as a single seamless piece of steel from blade to handle rather than a separate blade riveted to a handle scale, a construction Global's own materials tie to centuries of Japanese sword-making technique. The blades use Global's proprietary CROMOVA 18 stainless steel, ice-tempered and hardened to roughly 56 to 58 Rockwell, ground to a thin, acute edge angle instead of a Western bevel.
