About Mercer Culinary
Mercer Tool Corp. was founded in 1968 by Mel Wallick on Mercer Street in New York City, originally producing industrial files and abrasives. The company grew into a third-generation family business now headquartered in Ronkonkoma, New York, with two divisions under one roof: Mercer Abrasives, the original industrial line, and Mercer Culinary, the professional cutlery brand behind the knife we feature. Mercer Culinary has supplied NSF-certified training cutlery to culinary education programs for more than three decades and is the predominant knife supplier to more than 90% of culinary academies in North America, a reach that comes directly from being the knife a generation of working cooks first learned to sharpen and hold.
